This is by-far one of my FAVORITE recipes and I’m so excited to share it with you!!! I have to preface this recipe though with the fact that I typically do not like cottage cheese…like at all. But trust me when I say this recipe is worth trying!
I don’t know about you, but when lunch time rolls around, I tend to just grab and go…or eat the leftovers from what my kids just finished eating. #momlife 😉 However, meal planning (and prepping) has changed that for me and this is my go-to when planning out lunches for the week. I at the very least make this monthly. I hope you enjoy as much as I do!
Chicken BLT Stuffed Avocados
8 Slices of Turkey Bacon, baked crispy
1 chicken breast, shredded
3/4 cup Cottage Cheese (small curd)
1 cup Spinach, chopped
2 Tomatoes, chopped
Salt and Pepper to taste
Combine the chicken, turkey bacon, cottage cheese, salt and pepper. When ready to serve; mix in the spinach and tomatoes and put on top of 1/2 an avocado. This recipe makes 6 servings.
